Evelyn's Kitchen Garlic Lime Shrimp & Sauteed Spinach

EK whipped up their Garlic Lime Cast Iron Shrimp. This dish is one of our favorites. Layers of flavor come from lime zest, fresh lime juice & minced garlic. Enjoy!

Garlic Lime Shrimp & Sauteed Spinach


Serves Four to Six


Shrimp: Two Pounds, peeled & deveined, tail off (Look for 21-25 Size)

Marinade:
Zest & Juice of 4 Limes
Two Tablespoons Olive Oil  
2 Teaspoons organic granulated garlic or two teaspoons minced fresh garlic
1 Teaspoon Red Pepper Flakes (add more if you like spice!) 
1/2 teaspoon coarse sea salt 

Whisk all marinade ingredients in a non reactive bowl'
add shrimp & coat well
let stand for 10 to 15 minutes
while its marinating you need:
Cast Iron Skillet
2 tablespoons Olive Oil 

Put cast iron skillet (or any heavy non stick pan) on stove over medium high flame
turn heat on medium high
let pan heat 5 minutes
then add olive oil and immediately add shrimp

Sear for 3 minutes and then using tongs, flip each shrimp and sear another 2 minutes
turn heat off and let rest while you prepare spinach. 

Spinach: 
2 teaspoon olive oil
dash of granulated garlic or about 1/4 teaspoon minced fresh garlic
1/2 lime or lemon
2 cups spinach
pinch of coarse sea salt 

Heat a large non stick skillet on medium high
When hot (hover your palm over the center of the palm…if you feel warmth you're ready to go!), add olive oil and the immediately add spinach
Gently nudge spinach around pan and then using tongs, flip spinach over so bottom that has wilted is now on top
Squeeze your lemon or lime right over the top of the spinach and turn down heat
Nudge and flip until all the spinach has wilted and is a vibrant bright green
throw on coarse sea salt to taste

Plate with Garlic Lime Shrimp & Enjoy!
