Evelyn's Kitchen Spicy Cilantro Gazpacho

Try this fresh, delicious Evelyn's Kitchen Spicy Cilantro Gazpacho recipe! You'll enjoy tons of veggies, lots of cilantro, fresh lime and jalapeno, some red onion, a hint of cumin and of course, summer vine ripe tomatoes for the base. Dice an avacado and mix in. Layers of Flavor, lots of color and completely filling.

1 Bunch Cilantro
Juice of 6 Limes
Juice of 1 Lemon  
1 Teaspoon cumin
3 Jalapeños (use less if you like less spice) 
1 Small Red Onion/ Halved
4 Vine Tomatoes
1 English Cucumber (peeled and chopped into 4 pieces) 
1 Orange Pepper, cut in slices and seeds removed
1 Yellow Pepper, cut in slices and seeds removed
Splash of White Vinegar (optional) 
coarse sea salt to taste
2 Avacados

In food processor, pulse until well blended: 
first 4 ingredients
2 of the jalapeños
1/2 Onion

3 Vine Tomatoes
1/2 English Cucumber
and pulse until well blended 

remaining jalapeño
remaining red onion
remaining tomato
remaining cucumber
Yellow & Orange Pepper
Splash of White Vinegar if using 

Pulse until rough chopped.  
Should have a lot of texture in a soupy base.  
Add coarse sea salt to taste and pulse a couple more times.  
Spoon into bowls, and gently spoon 1/2 avocado diced to each bowl.  

Makes approximately 4 servings.
